N: Rich and oaky, polished wood, some briny/pickle juice notes. P: Brine forward, then maple syrup, quite hot (understandably), water brings out some of the woody notes and some dry barndy notes, still a fair amount of brine (in a good way) and some pine. Finish: Walking through the pine forest.
N: Beautiful mix of strong spice - clove, anise, cinnamon, a touch of nutmeg, some toffee, some maple syrup, and a nice solid wallop of wood. Some black cherry, light pepper.
P: Rich and syrupy. Heat as expected; cinnamon, a little chili oil, plenty of wood, black cherries and plums, a hint of vanilla; maple syrup, tons of oak. Spicy and peppery.
F: Hot but beautiful. Lots of wood, pepper, plums and black cherries, nice bit of toffee for a second. Plenty of spice.
This is just a textbook well-done high-proof bourbon.
