Aged in American oak casks formerly used for both red and white wine.  Abv varies 57-59%

The nose on this one has a very light wine note. The palate is very fruity in the way that sherry aged casks are with dried fruit, but then has some nice, dry woodiness to balance it out. The finish is fruity, with a distinctively grape note, along with a touch of anise. Tasting blind, I would likely guess this was a sherry cask, though maybe third or fourth fill.

Red-brown amber color. I'm not sure what was with my glass at first, but I was getting high-corn Dickel type notes which was very fleeting and eventually faded into more spice and other completely different notes, including light fruit and wine. The palate was strong and rich, with some malt/grain on the back-end. Cask #W071210025, 57.7%, bottled 2012.09.21. [1/5/14]

N: Preservered fruits, red wine, sour and tart black berry/ raspberry.  Toasted bread and white pepper.

 

P: Less fruit than on the nose.  Green and brown pear cores with kiwi and dry pineapple.

 

F: Toffee and peanut brittle

n: yellow cherries, grass, caramel apple, and hint of cocoa powder. Rum raisins and christmas fruit cake.

 

t: spiced apple cider, heavy caramel, jammy fruits, and roasted black tea. Dark chocolate dipped prunes. Dried flower petals with a mineral and oaky/tannic finish. Nice whiskey, unique and surprisingly fruity. Velvety and easy to drink at a respectable 56.3% ABV. Desserty!  [B+/A-, cask W101207035]

n:  Caramel squares and faucet water

 

p:  Semi-sweet.  Toffey and fresh laundry.  Prunes.  Bit peppery on the finish.

Nose: Dark rum, a bit floral, with some citrus fruits and dark chocolate

 

Taste: Dark rum, cognac, brown sugar, dark fruit, vanilla, caramel, grapes, apricots, and herbs

 

I love this stuff. My favorite of the Kavalans.
